@ Oak Room at the Strater Hotel. Featuring Sur Lucero M.S & Chef Neal Drysdale. Umami was first identified by Japanese scientist Kikunae Ikeda in 1907. He discovered that glutamate had a taste that was distinctive from the traditional sweet, sour, bitter & salty sensations. Ikeda named it “umami”, from the Japanese words umai and mi, translates to “delicious” & “essence”. Many foods have natural umami, their umami levels can increase when they undergo various transformations. Ripening, drying, curing, aging & fermentation all increase the umami level. Fermentation also applies to the umami sensation in beverages such as beer and wine. Join Master Sommelier Sur Lucero for a hands on tasting of five wines, paired with bites of food that allow you to experiment with sweet, sour, salty, bitter, spicy, fatty & most deliciously, umami. Sur & the group will discuss which pairings work, which ones did not, & why!?

No. Please proceed directly to the listed seminar location. Your name will be on a list at the door. Please bring your ID and please, leave your pine tree perfume at home! No perfume or cologne at any DWE event. We want to smell the wine, not the people. Have fun!

You do not need to check in at the DWE Event office in the back lobby of the Strater Hotel for seminars. Please proceed directly to the seminar location and show your id at the door. You do not need to bring your glass to any seminars. In order for all guests to get the most out of their “experience”, please refrain from wearing perfume or cologne to any Durango Wine Experience event.

You must be 21 years of age to participate in the Durango Wine Experience.
